Mediterranean detox salad

Currently on a gentle detox, cutting down all kind of sugar (even coming from fruits), grains and flours and trying to up my protein intake (as percentage, which means eating more protein than carbs) and to approximately match 40% protein, 30% carbs & fat.

I just like to be in my clients shoes and try different things around food as a way to understand more where they come from and also experiment with different ways of eating.

So today I made this salad for lunch, it was so satisfying and delicious.

It only takes 5 minutes to make, it has approx 20 g protein per serving, 64% fiber and 15% carbs! And yes you can totally detox eating this!


Salad Ingredients:

3 cups of cooked canellini beans (or 13 oz box or can)

3 cups of baby arugula (packed)

2 tomatoes, cut in chunks

1 avocado, sliced

1/4 cup soaked walnuts (optional)

1 tsp sumac

1 tbsp zaatar mix (thyme + sesame seeds +sumac; you can get it from any middle eastern store or just skip it)

Dressing ingredients:

1/2 lemon, juiced

2 tsp raw apple cider vinegar

1 tsp olive oil or avocado oil

1 tbsp liquid aminos (or tamari or shoyu)

pinch of sea salt

pinch of black pepper

Guidance:


 
Drain the beans. Set aside.

Prepare all the ingredients and what need to be cut and sliced.

Mix all the dressing ingredients together in a small cup or bowl.

Add all the salad ingredients to a medium bowl.

Pour the dressing over the salad ingredients.

Mix until all is coated with the dressing.

Adjust seasoning to taste.

Serve.

Add extra avocados, zaatar or walnuts to your liking.

Enjoy!
