Easy vegan chcocolate pancakes


Hello guys,

Lately I am all about easy recipes that do not require an endless list of ingredients, are simple to make but still nutritious, maybe it is the summer energy, I think it is! Who want to spend the whole day in the kitchen when it is so hot and when all the fun is happening outdoors?!!

And I know, summer almost over, but not yet, we all still having some pretty jot days here is California and I think they will last one more month!

Pancakes are usually enjoyed on weekends but who wouldn't want to make their Mondays (or Tuesdays or any day of the week) a little better by treating themselves a little!

For this recipe, I used, and for the first time, a pancake mix ! I think I am going to do this more often, especially when i am short on time!

I chose a vegan & gluten free pancake mix. Yes most of the pancake mix have milk or eggs in them, so read the ingredients!

Ok, let's go to the recipe now!

 

Ingredients:

1 & 1/2 cup pancake mix

3/4 cup unsweetened soy milk

2 scoops Detox Organics superfoods

2 scoops chocolate vegan protein

1 tsp vanilla extract

Toppings:

Strawberry slices

Coconut whip cream

Dark chococalte

Maple syrup

Guidance:

Preheat a lightly greased skillet with coconut oil on medium heat.

Mix the dry ingredients together until well combined in a medium bowl.

Add the milk and vanilla extract and mix briefly.

You may want to add a bit more milk if the batter is too thick (this will depend on many things: which pancake mix you are using, which protein powder, milk etc)

Using a measuring cup, scoop 1/4 of the pancake batter and cook it for 2 to 3 minutes on each side, on medium heat.

Serve your pancakes with a drizzle of maple syrup, strawberry slices, dark chocolate and coconut whip cream.
