Detox Carob and raspberries banana bread


The most delicious and nutritious banana bread you could ever make!

sacrificing taste for nutrition is outdated! You can have your cake and eat it, just be mindful on how you are preparing it, what ingredients you are using so you can make food enjoyable again without guilt, fear or shame! (not that you should feel any of these even when you are not eating the healthiest food! these feelings will make any food unhealthy).

This recipe is:

Vegan

Gluten Free

Refined sugar free

High in nutrition

you can make it soy free by using any other type of plant based milk.

 

Ingredients:

Dry ingredients:

1 & 1/2 cups Gluten free flour (I used Bob's red mills, not sponsored)

1/2 cup almond flour

1/2 cup carob powder

2 scoops Detox Organics superfoods

1 tbsp baking powder

1 tsp xanthan gum

1/4 tsp nutmeg & cinnamon

small pinch of sea salt

Wet Ingredients:

3 mashed bananas (approx 1 cup banana puree)

1/2 cup unsweetened soy milk (or any other mylk of choice)

3 tbsp melted coconut oil

1/2 cup maple syrup

------

1/2 cup fresh raspberries to add in the middle of the batter

To garnish:

1 cup of dark chocolate chips (I use the ones that are stevia sweetened

Some fresh raspberries to add on top

1/4 cup of slivered almonds (or any other nut of choice)

a little coconut oil to grease the bread pan

Guidance:

Preheat the oven at 350F.

In 2 separate bowls, mix the dry ingredients together and the wet ingredients together.

Pour the wet ingredients onto the dry ones and mix until a batter is formed.

Grease a bread pan.

Transfer half of the batter (should be on the thick side) to the bread pan.

Even the surface with a spatula and add rows of fresh raspberries.

Top it with the rest of the batter.

Smooth the surface and make it even.

Bake the bread for 60 minutes or until a toothpick comes out almost dry.

Transfer the bread to a cooling rack. you may need to use a knife to loosen the edge of the bread if it is sticking to the pan.

Let it cool.

Meanwhile, melt the chocolate chips using a double boiler, which means, place the chips in a bowl on top of hot way (not boiling water) and stir until they melt.

Decorate your carob bread with the chocolate glaze that you spread on top, add slivered almonds and fresh raspberries to taste.

Serve and enjoy with the surprise raspberries on the inside.

Keep any leftovers refrigerated.
