Making your own coconut yogurt at home is as easy as pie.


Making your own coconut yogurt is not only delicious but is also a good dose of probiotics your gut will thank you for.

Probiotics are linked to good digestion, less bloating, better bowel movement, yes you can say goodbye constipation if you make sure you eat probiotics rich food (or take probiotics supplements).

This recipe is super easy too! All you need is 3 ingredients! and some patience, yes because you should wait till the fermentation takes place and your coconut milk ferment into coconut yogurt! What? You can do magic in you own kitchen? Yes, and you know why? because you are magical :)

 

Servings: 2

Preparation time: 5 mins

Fermentation time: 12 to 24 hours

 

Ingredients:

- 2 cups of full fat coconut milk

- 1/2 tsp of probiotic powder (if you have it in capsules, just empty the capsules until you fill 1/2 tsp)

- 6 drops of liquid stevia ( I like to use stevia whenever i can to keep the glycemic index at 0, yes stevia's GI =0) you can use any other natural sweetener you prefer, but the result won't be as white.

Instructions:

In a bowl, mix 2 cups of coconut milk with 1/2 tsp of probiotic powder, stirring well until well incorporated. Cover the bowl with a fine cheesecloth and let it sit on the counter top for 48 hours (but it could take up to 72 hours! yes it all depends on the quality of the probiotic you are using, weather, humidity and temperature in your house. If your house's temperature is over 75 F, you may have yogurt in 24 hours or so.

After the milk has fermented, you can clearly see that it transformed into a thick, more solid texture and it tastes like yogurt!

Refrigerate.

Serve some into a cup, add your favorite sweetener to taste, top with some fresh, local and seasonal fruits, you can add nuts, seeds, or granola and enjoy a good dose of health!

P.S: Make sure your probiotic is alive by keeping it in the fridge.
